The dedication to viticulture in Frómista has a tradition that is already documented in the 14th century, and is fundamentally related to the production of the monastery and the vassals of San Martín. As a vestige of this preferential dedication, today there are three peripheral areas where the wineries have been grouped.

In the Castle area, one of the oldest wineries in the region has survived, perfectly preserved since the 15th century, the Zarzavilla Winery, heir to the production started with the Benedictine monks of San Martín and continued after the confiscation of Mendizábal by several families from which Alejo Serrano Peña, grandfather of the current owner Carmelo Serrano González, takes the witness.

Proof of the passage of time are the galleries at different levels, which present pointed barrel vaults, groin vaults and other barrel vaults with lunettes, in imitation of architectures whose stereotomy was executed in stone.

Bodegas Zarzavilla is excavated on high ground of very hard clay and the marks of the pikes are still preserved on the walls and vaults. The winery consists of three naves, two of them on the same plane, each 15 meters long, and one more on a lower plane, 12 meters long, where the Cartesian well is housed.
